Blas Escarcega is the Founder and CEO of Franchise Growth Consulting, a Dallas-based firm specializing in helping restaurant brands scale through smart, sustainable franchise growth. With over 25 years of experience in restaurant finance, development, and strategic planning, Blas has guided both emerging and established concepts through the complexities of expansion.

Prior to launching Franchise Growth Consulting, Blas served as Vice President of Franchise Development for Pollo Campero, the largest Central American chicken chain. Over his 18-year tenure, he also held key leadership roles—including Corporate Controller, Director of Finance, and Corporate Business Partner—playing a pivotal role in U.S. growth, brand positioning, and performance management for Pollo Campero.

Blas began his career in public accounting at a Big 4 firm and went on to serve as CFO for an Anheuser-Busch distributorship before joining Campero in 2007. His unique blend of financial acumen and development expertise empowers clients to build scalable franchise systems backed by data, strategy, and operational insight.

Through Franchise Growth Consulting, Blas partners with restaurant leaders to develop franchise models, refine brand positioning, and implement performance-driven growth strategies.

Fluent in both English and Spanish, Blas brings a multicultural lens to franchise growth, helping brands connect with diverse markets across the U.S. and Latin America.
